HUMMUS

Hummus is quick and easy to prepare and great as a snack or appetizer.

INGREDIENTS, THERMOMIX, TM31:

400 g chickpeas (I use cooked canned chickpeas, but you can also use dried chickpeas and soak them)
1 or 2 garlic cloves
150 ml olive oil
A few sprigs of fresh coriander (amount to taste)
Pepper
Salt

PREPARATION:

1. Pour off the chickpea water and keep it, wash the coriander and remove the stalks and chop finely with a knife
2. Put the garlic, coriander, olive oil, pepper and salt in the blender jar and chop finely, then briefly set to puree
3. Add the chickpeas and puree, add a little of the chickpea water if needed to make the hummus smoother, transfer to a container and serve
