Rhabarber-Erdbeer-Joghurteis

Zutaten für ca. 1 Liter Eis


200g Rhabarber
100g Erdbeeren
200g Zucker
500g Griechischer Joghurt (10% Fettgehalt)
1 unbehandelte Zitrone oder Limette
1 Päckchen Vanillezucker

Zubereitung


Rhabarber putzen, schälen und waschen und in kleine Stücke schneiden. Die Erdbeeren putzen, waschen und halbieren.

Von dem Zucker 6 EL abnehmen und in einem Topf hellbraun karamelisieren. Den Rhabarber mit ca. 2 EL Wasser dazugeben und aufkochen lassen. Die Erdbeeren ebenfalls dazugeben und das Ganze ca. 15-20 Minuten zu einem Mus kochen, dann auskühlen lassen.

Den Joghurt mit dem restlichen Zucker, dem Vanillezucker und der Zitronenschale vermischen.

Die Joghurtmasse 25 Minuten in der Eismaschine gefrieren lassen. In den letzten 5 Minuten das Rhabarber-Erdbeermus unterrühren.

Man kann das Eis auch ohne Eismaschine im Gefrierschrank 4-5 Stunden gefrieren lassen, muss dann aber während des Gefrierens 2-3 mal kräftig umrühren.

Das Joghurteis vor dem Servieren etwa 15 Minuten geschmeidig werden lassen.
